Bay of Sprigs Cocktail


  • 1 ½ oz Beefeater Gin
½ oz Battavia Arrack rum (or substitute with your favorite rum)
½ oz apple cider
¼ oz fresh lemon juice
¾ oz thyme and bay leaf simple syrup

Thyme and Bay Leaf Syrup 
1 cup sugar
  • 1 cup water
  • 5 bay leaves
  • 5 sprigs Thyme
  • 10 white peppercorns, whole

To Make Syrup
-Add sugar and water together in a pot and bring to a boil.
-Add 5 bay leaves, 5 sprigs of thyme and 10 white peppercorns to syrup and stir.
-Allow syrup to cool.

To Make Cocktail
-Mix gin, rum, apple cider, fresh lemon juice, and ¾ of the thyme and basil leaf syrup together in a shaker with ice and shake thoroughly.
-Pour drink into a chilled cocktail glass using a strainer.
-Garnish cocktail with a sprig of thyme.
