Lemon Vinaigrette


Makes 2 cups (32 tablespoons)


  • 2 Sunkist® lemons
  • 1 ½ cups olive oil
  • 1 clove garlic
  • 1 medium shallot, peeled and quartered
  • 1 tsp. Dijon mustard
  • 1 Tbsp. honey or agave
  • Freshly ground black pepper


  1. Zest one of the lemons and place the zest in a small bowl or a quart sized measuring cup.
  2. Juice both lemons and add the juice to the zest, along with the olive oil, garlic, shallot, Dijon, honey or agave.
  3. Process with an immersion blender until the garlic and shallot are minced and the mixture has thickened and is smooth, 20 to 30 seconds.
  4. Season with black pepper.
  5. Taste and adjust the seasoning as desired.
