Pick up Saltfish with a Citrus Avocado Cucumber Salad

Pick Up Saltfish

  • 1/2 lb salted codfish "saltfish" (boneless)
  • 1/4 cup parsley (finely chopped)
  • 8 spigs thyme (finely chopped)
  • 1 tsp Theo's Scotch Barnett Pepper Sauce
  • 3 tbl salad oil
  1. Soak salted cod fish in room temperature water for 3 hours. Pour off water from salted cod fish and continue to soak for an additional 3 hours. Note: Salted cod fish may soak overnight. Soaking the salted cod in water removes the excess salt from the fish. The longer the fish soaks the less salted the fish will become.
  2. Drain water from salted cod fish. "Pick up" pick apart fish into pieces with your hands or with a fork. Add parsley, thyme, Theo's pepper sauce and salad oil. Mix all ingredients thoroughly.
  3. Pepper to taste and serve cold.

Citrus Avocado Cucumber Salad

  • 1 ea. orange (segmented)
  • 1/4 cup red onion (finely chopped)
  • 1 ea. tomato (cored & julienne)
  • ½ ea. avocado
  • ½ ea. cucumber
  1. Segment orange and place into small bowl.
  2. Take one cucumber and cut in half horizontally and diagonally.
  3. Core out the seeds using a tablespoon. Julienne cut the cucumber and add to the bowl with the segmented oranges.
  4. Cut the tomato in half and squeeze out the seeds.
  5. Julienne cut the tomato. Slice the avocado.
  6. Toss orange segments, cucumber, tomato and avocado into a bowl.
  7. Season to taste. Chill then serve with Pick up Saltfish
