Goat Cheese and Chive Wontons with Red Chili Dipping Sauce

Makes 20 wontons



  • 1/4 cup water
  • 1/4 cup sugar
  • 1/2 cup unseasoned rice vinegar
  • 3/4 teaspoon soy sauce
  • 1/2 teaspoon sambal  or substitute 1/2 teaspoon dried hot red pepper flakes


  • 8 oz goat cheese, crumbled
  • 3 tablespoons chives, chopped
  • 1/2 tsp freshly ground black pepper
  • 20 square wonton wrappers
  • vegetable oil for frying
  1. For the sauce: Bring water and sugar to a boil in a small saucepan over moderate heat, stirring until sugar is dissolved. Remove from heat and stir in rice vinegar, salt, and sambal. Cool sauce, then chill, covered, at least 1 hour.
  2. For the wontons: In a small bowl, goat cheese, chives and black pepper. Lay out wonton wrappers and fill each with a heaping teaspoon full of filling. brush two of the four edges with water and bring unbrushed edges over filling to seal tightly. repeat with remaining wontons. heat about 1/4-inch deep amount of oil in a skillet over medium high heat. carefully fry wontons for about 4 minutes per side or until golden brown and crispy. drain on a paper towel. serve immediately with a red chili dipping sauce.
