Asian Shrimp Kabobs with Sweet Chili Garlic Sauce

Serves 6


  • 2 garlic cloves, minced 

  • 2 Tbsp extra-virgin olive oil 

  • 1/2 lb medium shrimp 

  • 2 sweet red peppers, cut into strips 

  • 8 scallions, cut into 1 1/2 inch pieces

Chili Sauce 

  • 1/4 cup sweet chili sauce (found in the Asian section of your supermarket)

  • 1 garlic clove, made into a paste 

  • 1 Tbsp lemon juice 

  • 1 cup mayonnaise 
  • 2 garlic cloves with chef's knife or garlic press.

Toss minced garlic with shrimp, scallions and peppers, 2 tablespoons olive oil, and salt in a medium bowl. Let marinate at room temperature for 30 minutes.

Remove shrimp and vegetables from marinade. Discard marinade. Thread shrimp, scallions and pepper strips onto skewers. Season kabobs with salt and pepper.  Grill, turning once, until shrimp are thoroughly cooked, about 3 to 4 minutes per side.
