Bacon-Wrapped Chicken Burgers

  • 1 pound ground chicken (white or dark meat, or a combination)
  • 1⁄2 cup finely chopped onions
  • 1⁄2 cup Only Sauce
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 4 slices bacon (not thick cut)
  • 1 teaspoon Only Rub
  • 2 onion rolls, split and lightly toasted Garnish and condiments of choice


  1. Heat a charcoal grill or gas grill  to medium heat.
  2. In a medium nonreactive bowl, stir together the chicken, onions, sauce, salt, and pep- per until thoroughly blended. Gently form the mixture into burger patties.
  3. Wrap each burger with a strip of uncooked bacon and secure it with a couple of tooth- picks. (If you prefer very crisp bacon, precook the bacon to about half done, let it cool slightly, then wrap the burgers. With this method, the bacon shrinks somewhat, so 2 slices may be needed to surround each burger.)
  4. Sprinkle both sides of each burger with the rub.
  5. Grill, uncovered, for about 10 minutes or so on each side, just until the center is per- fectly pink. Let the burgers rest, covered, for 10 minutes, then slide them onto the toasted onion rolls.
  6. Dress the burgers as you like and serve immediately.
