Baked Honey Spice Pears with Fresh Ricotta


Serves 6-8


  • 6 ripe pears
  • ½ cup honey (substitute maple syrup)
  • 6 tablespoons butter, melted plus more for pan
  • 1 tablespoon pure vanilla extract
  • 2 tablespoons fresh lemon juice
  • 1 heaping tablespoon ground cinnamon
  • 1 teaspoon kosher salt
  • 3 cups fresh ricotta cheese


  1. Preheat oven to 400 degrees. Butter an 8” baking pan.
  2. Core and cut the pears into 6 wedges each (do not peel). Arrange skin-side up in the baking dish, tucking close together.
  3. In a separate bowl, whisk together the honey, butter, lemon juice, vanilla, cinnamon, and salt. Pour over the pears.
  4. Place in the oven and bake for 20 minutes. Remove pan from oven, use a spoon to flip the pears, then return for 10 more minutes until tender.
  5. Serve warm over scoops of fresh ricotta. Also good with plain Greek yogurt.
