Bananas, The New Buttercream

By Jessica Goldman Foung

It turns out that, when wanting to make a creamy, rich frosting, you don’t need butter. You simply need a few bananas.

  • 2 ripe bananas
  • 3 cups powdered sugar

  1. To make banana buttercream, simply take two overripe bananas (or roasted for extra flavor) and, in a large bowl, use a fork to smash them until creamy.
  2. Then begin adding powdered sugar one cup at a time, blending with a hand-mixer on high.
  3. After about 3 cups, the banana mixture should be thick and ready to use.
  4. And use the spread to decorate cookies, cakes, and of course, banana bread.
