“Be Mine!” Valentine’s Day Cookies

Makes 40 cookies


  • 2 cups all purpose flour
  • ½ teaspoon baking powder
  • Pinch of salt
  • 1 stick unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Royal Icing:

  • 3 oz. egg whites
  • 4 cups confectioners’ sugar


  1. Whisk dry ingredients together. In a stand mixer cream butter and sugar until fluffy and pale in color, about 6 minutes. Slowly add egg and vanilla extract, scraping the sides of the bowl until fully incorporated. Add flour and mix until just together. Remove and wrap in plastic. Refrigerate for 30 minutes.
  2. Preheat oven to 350 degrees F. Break dough into sections and roll into ¼” thickness. Using bench flour dust heart cookie cutter and cut cookies. Place on a parchment lined cookie sheet and place in the refrigerator to keep cold, when all the cookies are cut, bake for 12-15 minutes until dry and just beginning to have color.
  3. Remove from the oven and allow cookies to cool completely before icing.
  4. To make royal icing, whisk egg whites and confectioners’ sugar in a stand mixer until desired consistency. Color as desired with food coloring.
  5. Fill a piping bag with icing and line cookies, this icing should be stiff. Thin remaining icing with a little water (1/4 teaspoon), color as desired and fill the cookie using a brush. Allow the cookies to dry overnight and stamp using the letters and phrases.
