Bourbon Bacon Apple Tarts


Serves 24 (2-inch) tarts


  • 4 slices of bacon, plus 2 cooked and crumbled
  • 3 tablespoons raw sugar
  • 1 sheet frozen puff pastry, thawed
  • 3 Granny Smith apples, peeled, cored, and diced
  • Juice of 1 lemon
  • ½ teaspoon ground cinnamon
  • 2 tablespoons maple syrup
  • ¼ cup bourbon, plus 1 tablespoon
  • 3 tablespoons butter, room temperature
  • ½ cup brown sugar
  • ½ heavy cream
  • 1 tablespoon powdered sugar


  1. Preheat the oven to 400°F..
  2. Place a baking rack on a baking sheet. Spray the rack with nonstick cooking spray and lay the 4 slices of bacon on the rack in a single layer. Sprinkle with half of the raw sugar.
  3. Bake in the oven for 8 minutes. Flip the bacon and sprinkle with the remaining raw sugar. Return to the oven and bake until the bacon is browned and crisp, about 8 minutes.
  4. Remove the bacon from the oven, transfer to a plate, and set it aside to cool completely. Once cool, break the candied bacon into small shards and reserve.
  5. Unfold the puff pastry onto a lightly floured surface and roll the sheet out slightly. Cut out 24 rounds with a 2-inch biscuit cutter. Place the rounds on a baking sheet lined with parchment paper. Top with a baking rack to help keep the rounds uniform and even as they bake.
  6. Bake in the oven until the rounds are golden brown, about 12 minutes. Remove and set aside to cool.
  7. Toss the diced apples with the lemon juice in a medium bowl. Add the cinnamon, maple syrup, ¼ cup bourbon, butter, and brown sugar. Stir to combine.
  8. Heat the apple mixture in a large skillet over medium-low heat. Cook until the apples are tender and the liquid has thickened, about 10 to 12 minutes. Mix the plain precooked and crumbled bacon into the apple filling. Set aside to cool.
  9. Combine the heavy cream, powdered sugar, and 1 tablespoon bourbon in a large chilled bowl. Whip with a hand mixer until soft peaks are formed.
  10. Use the tip of a small spoon to carefully remove a tiny circle of puff pastry from the center of each tart, creating a well. Fill each tart with 1 tablespoon of the apple filling.
  11. Put the filled tarts on a serving platter. Top with a dollop of whipped cream and garnish with shards of the candied bacon.
