Breakfast Quesadillas

Serves 2
  • Cooking spray
  • 5 large eggs
  • 1/4 cup salsa (mild, medium or hot)
  • 2 tablespoons milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 teaspoons vegetable oil or olive oil
  • 4 (6-inch) flour tortillas
  • 2/3 cup grated Monterey Jack or pepper jack cheese
  1. Coat a large stove-top griddle or skillet with cooking spray and preheat to medium-high.
  2. Meanwhile, in a medium bowl, whisk together eggs, salsa, milk, salt and pepper.
  3. Heat oil in a separate large skillet over medium-high heat. Add egg mixture and cook 3-4 minutes, until eggs are cooked but still moist, stirring frequently.
  4. Arrange 2 tortillas on a flat surface. Top with egg mixture, cheese and second tortilla. Place tortillas on hot griddle and cook 1-2 minutes per side, until tortillas are golden brown and cheese melts.
  5. Cut into wedges and serve.
