Caramelized Onions

  • ½ cup Sugar, Dark Brown
  • 1/3 cup Butter, Unsalted, Room Temperature
  • 2 ¼ cups Heavy Cream
  • ¼ tsp Sea Salt, Fine
  • ½ ea Vanilla Bean, Split
  • 3 ea Egg Yolks
  • As Needed Water, Boiling
  1. In a small saucepot melt butter.
  2. Add the sugar and cook on medium high heat till melted and smooth.
  3. Whisk in the cream with a wire whip and bring to a boil.
  4. Add the vanilla and salt and stir to combine with cream then remove from heat.
  5. In a separate bowl whisk egg yolks and slowly add them to the hot cream while whisking gently.
  6. Place the mason jars in a shallow hotel pan the pour 6 ounces of the mixture into the 8 mason jars.
  7. Pour the boiling water into the pan till halfway up the mason jars creating a water bath.
  8. Cover the hotel pan with foil and place into a 350-degree oven and cook for 50 minutes.
  9. Once done remove the pan from the oven and let cool at room temperature.
  10. Once cooled place lids on the mason jars and label, date and refrigerate till needed for future use.
