Caramelized Zucchini with Pasta

Serves 4


  • 4 medium zucchini - halved and cut onto medium slices
  • 1 large Vidalia Onion - halved and sliced
  • 8 garlic cloves coarsely chopped
  • 4 TBS Extra Virgin Olive oil or more to taste
  • Kosher salt and finely ground black pepper to taste
  • 1 cup chopped cilantro
  • 1 cup chopped fresh mint
  • 1/2 cup pine nuts
  • 2 cups Parmesan cheese
  • 2 cups reserved pasta water
  • 1/2 pound penne pasta or spaghetti 


  1. In a large skillet at least 3 inches deep sautee onions, garlic and zucchini until tender. Season with salt and pepper add cilantro and mint reserving some for final garnish. Cover and continue to cook until very soft and caramelised.
  2. Boil pasta In a 2 quart pot with salted water and a little oil. Cool pasta until al dente.
  3. Reserve 2 cups of the pasta water before straining it.
  4. Toss penne into the skillet with zucchini mixture and begin to mix together pver low heat so the pasta is well covered adding pasta water a bit at a time while stirring. Add Parmesan cheese and pine nuts and keep stirring add more pasta water as needed to keep pasta wet. Place in large or individual bowls and garnish with Parmesan and remaining cilantro and mint.
  5. Serve as is or as accompaniment to grilled shrimp, veal or lamb chops.
