Cheddar Cheese Soup Scones


Makes 8 Scones


  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • pinch of sea salt
  • 4 tablespoons butter
  • 1 cup mature Cheddar cheese, grated
  • 1 teaspoon chopped thyme leaves
  • 1/2 cup milk
  • oil, for greasing


  1. Preheat the oven to 400˚F.
  2. Sift the flour, baking powder, and sea salt into a bowl. Rub the butter into the flour mixture until it resembles fine breadcrumbs. Stir in two-thirds of the grated cheese, followed by the thyme.
  3. Gradually pour in enough of the milk to make a soft dough.
  4. Roll out the dough on a lightly floured surface to about 1/2 in thick and use a pastry cutter or upturned glass to cut circles.
  5. Transfer the scones to a greased baking sheet and sprinkle the remaining cheese over the scones.
  6. Bake in the oven for 12–15 minutes, then transfer to a wire cooling rack for 5 minutes.
