Chicken Spiedini

Serves 4

Most of my new diet is focused on eating lean meats, this easy-to-make chicken recipe is both flavorful, yet low in fat and carbohydrates. 

Chicken Spiedini Ingredients:

  • 1 lb skinless boneless Chicken thighs quartered
  • 2 sprigs of rosemary chopped
  • 3 Tablespoon of olive oil
  • Salt & pepper to taste

Salsa Verde Ingredients:

  • 1/2 cup chopped parsley
  • 1 jalapeño minced
  • 1/2 clove garlic minced
  • 2 Tablespoon of red wine vinegar
  • 1/2 cup olive oil
  • Salt & pepper to taste

Directions For The Chicken:

  1. Marinate the chicken with the olive oil, rosemary salt & pepper for one hour
  2. Divide the chicken chunks among 8 skewers & grill over high heat over grill or heavy cast-iron pan until charred and cooked through.
  3. While cooking the chicken, mix all of the ingredients for the salsa verde in a bowl
  4. To serve, top the cooked chicken with a few spoonfuls and the salsa verde
