Chickpea & Cucumber Cilantro Salad

Loaded with protein and yummy flavor this too is a naturally low fat side dish that everybody loves!



  • 2 cans of RINSED Chickpeas for 2.5 cups of left over chickpeas
  • 1 tablespoon of chopped red onion
  • 1 cup of cherry tomatoes, halfed
  • 1 large cucumber, chopped

Cilantro Lime Dressing

  • ¼ cup of fresh limejuice
  • 2 tablespoons of apple cider vinegar
  • Large bunch of cilantro, chopped
  • 1 tablespoon of honey
  • 1 clove of crushed garlic
  • ¼ teaspoon of ground cumin
  • ¾ cup of olive oil
  1. Rinse chickpeas, slice tomatoes and chop cucumbers and red onion combining them in salad bowl.  Set aside.
  2. Combine all of the dressing ingredients in the food processor or blender - except for the olive oil and blend. Slowly add the olive oil once everything is blended.
  3. Toss dressing with the slaw and top with chives and large pieces of cilantro for beauty!
