Chocolate Black Bean Brownies

Ingredients:

  • 1 (15 ounce) can of black beans - rinsed well & drained
  • * Equals 1/2 cup dry beans or 1 1/2 cup of cooked beans
  • 3 large eggs
  • 1/3 cup of coconut oil or vegan butter
  • 1/2 cup of cacao or cocoa powder
  • 1/8 teaspoon of sea salt
  • 2 teaspoons of gluten free vanilla extract
  • 1/2 cup of coconut sugar
  • *1/4 cup of chocolate chips & 1/4 cup of chopped nuts (optional)

Directions:

  1. Preheat the oven to 350°F. 
  2. Use coconut oil to oil an 8x8-inch baking pan.
  3. Place black beans, eggs, coconut oil, cocoa powder, salt, vanilla and sugar in the bowl of a food processor or blender and blend until smooth.
  4. Remove the blade and gently stir in the chocolate chips and nuts.
  5. Transfer mixture to the prepared pan.
  6. Bake 30 to 35 minutes, or until just set in the center.
  7. Cool before cutting into squares.
