Classic Chocolate Chip Cookies

Top of a picnic lunch with these Classic Chocolate Chip Cookies from Cara Eisenpress and Phoebe Lapine, authors of "In the Small Kitchen."


  • 2 /3 cup granulated sugar
  • 2 /3 cup packed light brown sugar (you can substitute dark)
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1 cup milk chocolate chips


  1. Preheat the oven to 375°F. Line 2 or 3 baking sheets with parchment.
  2. Combine both sugars and the butter in a large mixing bowl. With a mixer, a handheld beater, or a very strong arm, beat until creamy.
  3. Add the egg and beat until the batter is fluffy and light.
  4. Stir in the flour, baking soda, and salt until just combined.
  5. Mix in the chocolate chips.
  6. Drop rounded tablespoonfuls of the dough onto cookie sheets, spacing them about 2 inches apart.
  7. Bake for 6 to 8 minutes, until just barely set. Let cool on the cookie sheets for 5 to 10 minutes. Then transfer the cookies to plates to finish cooling.

Makes 24 to 30 cookies
