Crispy Broccoli



  • 3/4 cup malt vinegar
  • 1/4 cup soy sauce
  • 3 tablespoons brown sugar
  • Pinch of red chili flakes
  • 1 clean head of broccoli cut in 4
  • 1 large pot filled with fryer oil at 365 degrees


  1. Combine first four ingredients and bring to a boil.
  2. Once sugar is melted, let cool to room temperature.
  3. Drop broccoli into fryer for about 45 seconds until its starts to turn golden brown.
  4. Immediately remove and shake off oil.
  5. Drain on paper and quickly place into a bowl.
  6. Ladle the vinegar mixture and serve.
  7. Garnish with some fresh chopped chives or scallions.
