Diane's Ginger-Apricot Glazed Pork Roast

  • 3/4 cup all-fruit apricot jam or preserves
  • 1 Tablespoon low-sodium soy sauce
  • 1 Tablespoon orange juice
  • 1 Tablespoon rice wine vinegar
  • 1 Tablespoon Dijon mustard
  • 1-1/2 teaspoons ground ginger
  • 1 teaspoon dried thyme
  • 1/4 teaspoon ground black pepper
  • 2 pork tenderloins, about 1 and 3/4 pounds total, trimmed of extra fat
  1. Preheat oven to 425 degrees.
  2. In blender combine first 8 ingredients (preserves through pepper). Blend until smooth. Divide glaze in half in 2 bowls. Set aside.
  3. Place tenderloins in shallow roasting pan, brush with glaze and cook for about 20 minutes or until internal temperature registers 150 degrees F. Brush with glaze a few more times during roasting.
  4. Cover pork loosely with foil and let rest for about 5 minutes before slicing.
  5. Serve drizzled with remaining warm glaze.
  6. Enjoy!
