Easy Tomato Basil Pasta

  • 2 pints of organic cherry tomatoes
  • ½ cup extra virgin olive oil
  • ¼ teaspoon red pepper flakes
  • ¾ cup fresh basil divided into ½ cup and ¼ cup
  • 3 tablespoons of freshly grated Parmesan cheese
  • Salt and pepper to taste
  • 1-pound Fusilli pasta


  1. Chop the cherry tomatoes then drain the liquid.
  2. In a large mixing bowl, combine the tomatoes, olive oil, red pepper flakes, ½ cup of the fresh basil and salt and pepper.
  3. Let the tomatoes rest while you boil the Fusilli to al dente.
  4. Drain the pasta and add to the tomatoes then toss lightly.
  5. Add the freshly grated Parmesan and toss lightly once more.
  6. Garnish with the ¼ cup of chopped basil and some freshly grated Parmesan cheese.
