Fusilli & Mushroom Mac 'n Cheese

  • 8 ounces fusilli pasta
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, chopped
  • 1/3 cup diced white onion
  • 2/3 cup half and half
  • 6 ounces mini bella mushrooms, cleaned & coarsely chopped
  • 1/2 cup grated cheddar cheese
  • 1/2 cup grated manchego cheese
  • 2 tablespoons fresh, chopped parsley
  • season to taste with salt and pepper



  1. Cook pasta, drain, place in a large mixing bowl. Toss with some olive oil. Set aside.
  2. In a large skillet melt butter & olive oil over medium heat. Sauté onions & garlic for a few minutes until translucent & fragrant. Add mushrooms & sauté two minutes. Add half and half. Increase heat to medium high, bring to a simmer & cook about 3 minutes. Add cheese & mix in well. Cook until cheese melts & sauce is creamy. Stir in parsley.
  3. Add sauce to pasta & combine well, season to taste with salt and pepper. Serve with grated cheese.
