Glazed Sweet Chili Shrimp

  • 1-1/2 lbs jumbo or extra large shrimp, peeled and deveined
  • 1 cup Sweet Chili Sauce, divided
  • 1 tsp. oil
  • 1 large bell pepper, sliced -- combo of red, yellow and green
  • 1 large onion, sliced
  • 1 tsp. minced garlic
  • 8 (8-inch) flour tortillas, heated
  1. Place shrimp on metal skewers. Baste shrimp generously with 1/2 cup Sweet Chili Sauce.
  2. Grill shrimp over medium heat about 5 minutes until shrimp turn pink. Set aside and let cool slightly.
  3. Stir fry bell pepper, onion and garlic in oil until crisp-tender. Remove shrimp from skewers and add to pepper mixture until heated through.
  4. Spoon mixture into tortillas and roll up. Garnish with fresh cilantro or as desired.
