Goat Cheese Tempura

"Next Food Network Star'" contestant Alicia Sanchez shares this tasty recipe for goat cheese tempura with Better viewers.

  • Ingredients:
  • 8 small baguette slices, 1/2-inch thick, brushed with olive oil
  • 1/4 cup panko
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon minced fresh rosemary
  • Pinch kosher salt
  • 1 egg, beaten
  • 1 (4-ounce) log goat cheese, cold
  • 1 tablespoon vegetable oil
  • 4 tablespoons raspberry preserves
  • 2 slices pickled jalapenos

  1. Preheat the oven to 400 degrees F.
  2. Place the baguette slices on the oven rack and bake until slightly browned and crispy, about 10 minutes.
  3. In a small bowl, combine the panko, flour, rosemary and salt. Place the egg in a separate bowl. Slice the goat cheese into 8 rounds. (Make sure the cheese is cold and your knife is sharp so the cheese retains its shape.) Dip each cheese circle in the egg, and then in the panko mixture.
  4. Heat a skillet on high. Add the oil and heat. Add the cheese and cook until light golden brown, about 2 minutes. Flip and repeat. Remove to paper towels to drain.
  5. Using a food processor, combine the raspberry preserves and jalapenos. Place a small dollop of the raspberry mixture on each slice of baguette and top with a piece of cheese.

4 to 8 servings
