Goat Cheese Whipped Potatoes


Yield: ½ Gallon


  • 5 lbs – Idaho potatoes or Yukon Gold (peeled and eyed)
  • ½ lb – whole butter-salted (diced)
  • 1 ½ cups – whole milk
  • Kosher salt to taste
  • 1 cup goat cheese (softened)
  • 2 Tbsp whole butter - salted (room temp)
  • 3 Tbsp chives (½ in batons)



  1. Peel and cut potatoes.
  2. Place into room temperature water and allow to soak overnight under refrigeration
  3. Remove from water and place potatoes in a pot
  4. Cover potatoes with cold water lightly salted
  5. Simmer until potatoes are easily pierced with a fork
  6. Heat milk and butter together-hold
  7. Drain potatoes well in a colander   
  8. Place hot potatoes in bowl
  9. Mix and whip until smooth
  10. Gradually add milk/butter mixture
  11. Whip on high speed until smooth and creamy
  12. Add the goat cheese and the additional whole butter and mix well
  13. Check flavor, season if necessary
  14. Place in the serving dish
  15. Top with the chives
  16. Serve
