Green Chili Shrimp

  • 4 tomatoes, stems removed
  • 1 fresh green chili, seeds removed, chopped
  • 2 tablespoons chopped fresh cilantro
  • Juice of 1 lime
  • 1 garlic glove, crushed
  • Salt to taste
  • 32 large shrimp, peeled and deveined, tails left on


  1. Fill a medium pot with water and bring to a boil. Add tomatoes and poach for 30 seconds.
  2. Remove the tomatoes from the pot, peel, remove the seeds, and dice.
  3. In a medium bowl, mix the tomatoes, chili, cilantro, lime juice, and garlic, plus salt to taste, until thoroughly combined.
  4. Fill the bottom part of a large steamer halfway with water and bring to a simmer. Place the shrimp in the top part of the steamer and cook until they turn pink and opaque, about 3 minutes.
  5. Mix shrimp with the tomato salad and serve warm or chilled.
