Green Papaya Salad

Makes 2-4 Servings


  • 3 small garlic cloves
  • Thai chili, to taste
  • 2 cups fresh green papaya, shredded
  • ½ cup cherry tomatoes, quartered
  • 1 tablespoon palm sugar
  • 1 tablespoon tamarind juice
  • 2 teaspoons lime juice or 1 lime wedge
  • 1 tablespoon fish sauce
  • 2 tablespoon roasted peanuts
  • Dried shrimp, to taste (optional)
  • Pla la, to taste (optional)


  1. In a clay mortar, pound garlic and chili until they release their oils and break down, about 1 minute. Be careful not to completely crush the ingredients.
  2. Add the green papaya and continue to pound, about 1 minute. Repeat with the cherry tomatoes pounding in between additions.
  3. Add the palm sugar, tamarind juice, lime juice, and fish sauce to the salad. Transfer to plates and top with peanuts and dried shrimp before serving.
