Grilled Chicken Kebabs

A finger friendly dish that cooks up quick, packs plenty of flavor, and can be enjoyed either hot or cold.

Serves 2

  • 1 lb Boneless, Skinless Chicken Breasts, cut into chunks
  • 1 Medium Red Onion, roughly chopped
  • 1/3 Cup Extra Virgin Olive Oil
  • 2 Tablespoons Red Wine Vinegar
  • 1 Teaspoon Kosher Salt
  • ½ Teaspoon Fresh Cracked Pepper
  • 1 Tablespoon Fresh Oregano, minced
  • 3 Cloves Garlic, minced
  • 6 inch Wooden Skewers, soaked in water for 15 minutes
  1. Add all items into a Ziplock bag and toss to ensure ingredients are thoroughly combined.

  2. Marinate chicken in the refrigerator for at least 30 minutes, but not more than 4 hours. 

  3. Next, prepare grill or grill pan over medium high heat.  Skewer chicken and onions, ensuring an even distribution.  Grill over direct heat for 2 minutes per side, or about 8 – 10 minutes. 

  4. Remove from heat.  Serve.  

  5. If serving chilled, allow the chicken to cool to room temperature before packing and refrigerating.
