Grilled New York Strip with Chili-Lime Butter

  • 4 (14oz) New York Strip Steaks
  • 2 T. peanut oil
  • 2 T. salt
  • 2 T. cracked black pepper


  1. Brush with oil and season well with salt and pepper
  2. Grill on indoor grill
  3. Serve with a slice of the butter on top

Compound Butter


  • 1 lb. unsalted butter
  • 4 Serrano chiles, roasted
  • 6 cloves garlic, roasted
  • 6 limes, juiced
  • 4 T. salt


  1. Puree roasted chiles, garlic, and lime juice in a food processor
  2. In a mixer, whip the butter until soft
  3. Add the chile mixture and salt and whip for 3 minutes
  4. Using a rubber spatula, place butter onto wax paper sheets and roll into logs and put in freezer
  5. These can be frozen for 1 month
