Directions:
Prepare grill or grill pan over medium high heat.
Coat vegetables in olive oil and season liberally with kosher salt and fresh cracked pepper.
Grill vegetables over direct heat for 1 – 2 minutes on each side, or until slightly charred and just tender.
Remove from heat. Serve.
If serving chilled, all the vegetables to cool to room temperature before packing and refrigerating.
