Hearty Salad with Cranberry Dressing


Serves 4-6


  • 1/2 cup prepared cranberry sauce
  • 1 Tablespoon red wine vinegar
  • 3 Tablespoons plain Greek yogurt
  • 2 Tablespoons olive oil
  • 1 1/2 teaspoon prepared horseradish
  • 1/2 teaspoon salt
  • ¼ teaspoon pepper 
  • 1 large head romaine lettuce quartered lengthwise
  • 1/4 cup toasted pepitas


  1. Whisk together cranberry sauce, vinegar, yogurt and olive oil. Stir in horseradish, salt and pepper to taste.
  2. Plate the lettuce wedges on individual plates. Drizzle with some cranberry dressing and top with toasted pepitas.
