Homemade Cilantro Pickles

Ingredients:

  • ¼ cup of apple cider vinegar
  • 2 medium cucumbers, medium sliced
  • ½ red onion, thinly sliced
  • 2 tablespoons cilantro leaves, chopped
  • 1 pinch of cayenne pepper
  • 1 tablespoon of coconut sugar
  • ½ teaspoon of salt

Directions:

  1. Combine all ingredients in a glass jar or bowl and cover refrigerating for a minimum of 3 hours.
  2. These pickles will keep for 3 weeks in the refrigerator.
