Jerk Pork Tenderloin


Brine Ingredients:

  • 2.5 Pints Water
  • 1/3 cup Sugar
  • 2/3 cup Kosher Salt
  • 1 Tbsp Cracked Black Pepper
  • 1/3 cup Garlic Puree
  • 10 each Bay Leaves
  • 4 each 10 ounce pork tenderloins


  1. Heat water over medium flame.
  2. Dissolve sugar and salt.
  3. Remove from heat and refrigerate until cool.
  4. Add remaining ingredients, and blend using a hand mixer or blender for 1 minute. Submerge tenderloins in brine solution for at least 6 hours.

Jerk Rub Ingredients:

  • 1/3 cup Jerk Seasoning

  • 4 oz. Olive Oil


  1. Combine well to create a paste.
  2. Remove pork from brine and discard brine solution.
  3. Rinse tenderloins with cold water and pat dry. Coat tenderloins with Jerk Rub Paste and refrigerate for at least 12 hours.

Cook Directions:

  1. Place tenderloins on a hot, clean, oiled grill.
  2. Cook for approximately 5 minutes on each side over high heat.
  3. Move to low heat until cooked all the way through, approximately 10 additional minutes.
  4. Remove from heat and let rest for 3 minutes. Slice diagonally against the grain.
