Kale Christmas Holiday Salad With Orange Miso Dressing & Cranberries

Makes 4 – 6 Servings

Ingredients:

Dressing

  • 4 tablespoons Chickpea Soy Free Miso Paste
  • 3 tablespoons rice wine or apple cider vinegar
  • 3 tablespoons fresh orange juice
  • 2 tablespoons of brown rice syrup
  • 1/4 teaspoon of freshly grated ginger
  • pinch of freshly grated nutmeg (or dried)
  • pinch of cinnamon
  • pinch of cloves
  • 2 tablespoons of olive oil 

Directions:

  1. Mix the miso paste, vinegar, fresh orange juice and brown rice syrup & slowly whisk in the olive oil. (or you can put it in a small food processor to guarantee miso is diluted).

Salad Ingredients:

  • 2 Large bunches of washed & chopped bite sized kale. ¼ cup of dried cranberries & a ¼ cup of toasted pine nuts.

Directions:

  1. Toast your raw pine nuts in a cast iron skillet for 3 to 5 minutes over medium high heat. Combine cranberries, pine nuts and kale – then toss with dressing.
  2. You can also add thinly sliced Pears!
