Key lime Avocado Tart

  • ¼ cup of shredded unsweetened coconut
  • ½ cup of chopped pecans
  • ½ cup of pitted dates (about 10 of them)
  • 2 teaspoons of lime zest
  • Pinch of sea salt

Tart Filling

  • 2 avocados (pit removed)
  • ½ cup of fresh squeezed limejuice
  • ¼ cup of honey
  • 1 heaping tablespoon of coconut butter (you can substitute with coconut oil)
  • 2 teaspoons of lime zest
  • 3 tablespoons of coconut milk


  1. Start with the crust processing coconut flakes, pecans, dates, lime zest and sea salt in your food processor until the dates have become a sticky paste and the other ingredients are combined with it.
  2. Press the paste evenly into 3 mini spring form pans with removable bottoms (I spray my with coconut oil first).
  3. Rinse your food processor and add in all the ingredients for the tart filling and puree until very smooth, no clumps of avocado.
  4. Pour tart filling over your crusts, smoothing out the tops of these so they freeze evenly.
  5. Cover and place in freezer for 2 hours.
  6. Allow them to thaw for 10 minutes before serving.

*You can freeze left overs for another time!
