King Crab Tostada

  • 2 tbs olive oil
  • 6 oz pre made tortilla masa
  • 3 oz cotija grated cheese
  • .5 oz chipotle chiles, canned in adobo
  • 2 sprigs cilantro
  •  2 ears shaved corn
  • 1 pasilla chile
  • 1 medium sized onion, minced fine
  • 4 oz king crab, or lump crabmeat
  1. Shape the masa into a shape of a pizza, about 9”.
  2. Heat the oil in a small pan and add the corn, and onions.
  3. Sweat with no color until tender and add the pasilla chile and the chipotle.
  4. Cook until stender and remove from the heat.
  5. Cook the masa in the grill or in a pan over medium heat until well blistered.
  6. Take off the heat and spread the corn mixture, around the dough.
  7. Spread the cotjia cheese and arrange the crab around.
  8. Bake in the oven until crisp and add the cilantro for garnish and cut into 4 pices.
