Live Pasta

Delicious Live Pasta made of spiralized or julienne cut strips of yellow squash and zucchini tossed with tomatoes, olive oil and fresh basil and oregano for a dish packed with antioxidants and flavor. You may also top with pitted black olives and pine nuts.
  • 2 zucchini squash, spiralized or julienne
  • 2 yellow squash, spiralized or julienne
  • 3 tbsp. extra virgin olive oil
  • 1 cup tomatoes, diced
  • 5 sun-dried tomatoes, soaked in water for 30 minutes, then sliced
  • 1/2 small shallot, chopped
  • 1 small clove garlic, chopped
  • 1 tbsp. chopped fresh basil
  • 1 tsp. chopped fresh oregano
  • Sea salt, to taste
  • Ground pepper, to taste
  1. Put zucchini and squash in a large mixing bowl. Sprinkle with salt and pepper and toss with 2 tablespoons of olive oil. Add tomatoes, sun-dried tomatoes, shallot, garlic, basil and oregano. Add remaining tablespoon of olive oil and toss once more lightly to combine.
  2. Serve immediately. May be served on bed of spinach and arugula and topped with pine nuts and olives.
