Lomo Saltado with soy sauce, tomato, onion and crispy fries

Fast Recipe Ingredients:
  • 1/3 c canola oil
  • 1.5 lb beef tenderloin, flat iron or sirloin steak; in chunks
  • 1 recipe lomo saltado sauce (*A)
  • 1 red onion; sliced thick
  • 2 ripe red tomatoes; sliced thick (same as onions)
  • 2 tbsp garlic; minced
  • 3 tbsp cilantro; chopped
  • crispy French fries garnish
  • 4 portions steamed white rice


  1. Bring a wok to very high heat on the stove. 
  2. Add the canola oil and then sear the beef until well browned. 
  3. Remove the beef from the wok and place on a plate off heat.  Bring wok back to high heat and then add garlic, tomatoes and onions. 
  4. Sauté until onions are soft and then add back the beef. 
  5. Continue cooking until beef is near done and then add lomo saltado sauce. 
  6. Bring to a boil to thicken. 
  7. Add the last minute add the chopped cilantro. 
  8. Spoon this mixture into a large bowl and top with fries.  Serve immediately with a side of steamed white rice

(*A) Lomo Saltado Sauce

3 c low sodium soy sauce

1.5 c oyster sauce

¾ c veal jus warmed

¾ c red wine vinegar

corn starch mixed with water to make a slurry


Place soy sauce, oyster sauce, veal jus and red wine vinegar in a saucepan and bring to a quick boil.  Thicken with a slurry until glaze consistency is reached and then turn off heat.  Reserve until ready to use.
