Millet With Dried Figs, Fresh Bananas & Coconut Milk

4-6 Servings
  • 11/4 cups millet
  • 3 cups water
  • 2 cups dairy-free rice milk, almond milk or coconut milk
  • 1 teaspoon ground turmeric
  • 4 teaspoon of fresh grated ginger (optional)
  • 1 teaspoon organic vanilla extract
  • a pinch of sea salt
  • 1/2 cup chopped dried figs (organic sulfite free)
  • ½ cup of fresh sliced bananas
  • Ground flax seed, for topping (optional)
  1. In a saucepan combine millet, water, milk, turmeric, ginger, vanilla, salt, and dried figs. Bring to a boil and then reduce heat and cover, cooking on low for 30 minutes. If you want the millet softer add more liquid.
  2. I prefer this porridge to be extra soft.
  3. If you are heating up leftovers, do so in a skillet with a little coconut oil and add in fresh coconut milk or almond milk.
