Mintamelon Pops


Makes about 30 treats

  • 4 cups roughly cubed watermelon,
  • seeds removed
  • 2 tablespoons granulated sugar
  • 2 teaspoons fresh lemon juice
  • 1/4 cup mint leaves, minced
  • ½ teaspoon salt
  • 1 cup fresh or frozen blueberries
  • 15 ice pop sticks, cut in half
  1. Combine the watermelon, sugar, and lemon juice in a food processor and process until smooth, about 1 minute.
  2. Transfer to a clean bowl and stir in the mint and salt using a spoon or spatula.
  3. Pour the puree into ice cube trays, filling each opening about three quarters full.
  4. Spear 2 blueberries on the end of each ice pop stick using the blunt side.
  5. Place each stick into a slot, blueberry side down. They should stand up straight.
  6. Freeze for 4 hours, or until solid. Carefully flex the trays to release the pops.
