Nutritious Life Power Bars

  • 2 cups old-fashioned rolled oats*
  • ¼ cup ground flaxseed meal
  • ¼ cup shredded unsweetened coconut
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon sea salt
  • ¼ cup honey
  • ½ cup cashew or almond butter
  • ½ cup finely chopped dried apricots
  • ¼ cup unsweetened dried cranberries or goji berries
  1. Preheat the oven to 350°F. Coat an 8” x 8” square baking pan with canola oil cooking spray.
  2. Combine the oats, flaxseed, coconut, cinnamon, ginger, nutmeg, and salt in a large bowl.
  3. Combine the honey and cashew butter in a small bowl. Pour into the dry ingredients and stir to combine. Stir in the apricots and and cranberries until well combined.
  4. Press the mixture firmly into the pan. Bake for 25 minutes, or until the edges are browned.
  5. Let cool completely before cutting into 8 bars. Serve with 1 cup of low-fat milk. Store in an airtight container up to 1 week.
