Oven-Roasted Dry Rub Pulled Chicken Sandwich


By Chef Tim Doherty Pitmaster at Bobby Q’s family of restaurants in Connecticut (Bobby Q’s Bodacious BBQ & Grill in Westport; Bar Q BBQ Saloon in Stamford and Bobby Q’s Pit Stop in Greenwich).

Dry Rub Ingredients:

  • 1 tbsp. black pepper
  • 4 tbsp. cumin
  • 4 tbsp. paprika
  • 4 tbsp. garlic powder
  • 4 tbsp. onion powder
  • 2 tbsp. thyme
  • 2 tbsp. oregano
  • 2 tbsp. ancho chili


  1. Combine all ingredients and mix well. Apply generously to 2.5-3lb whole chicken. Sit overnight in fridge.
  2. Roast at 375 for 55 minutes -1 hour and let cool.
  3. Shred the meat off the bone, discarding the skin and separate the dark and light meat. Heat meat with BBQ sauce. Spoon on wholewheat rolls and enjoy!
