Peanut Butter Balls

By Kim McCosker

Makes 24

  • 14 oz. semisweet chocolate, coarsely chopped
  • ¼ cup crunchy peanut butter
  • 1 cup coarsely chopped peanuts

  1. In a saucepan, combine half the chocolate and the PB. Stir constantly over low heat until melted and combined.
  2. Pour the mixture into a small bowl and refrigerate for 1 hour or until firm.
  3. Line a baking sheet with wax paper.
  4. Roll teaspoons into balls and place on the baking sheet.
  5. In a microwaveable bowl, melt the remaining 7 ounces of chocolate in 30-second increments stirring after each, until smooth and creamy.
  6. Place the peanuts into a small bowl near the melted chocolate. Remove the balls from the freezer and dip, one at a time, in the melted chocolate, then roll in the peanuts.
  7. Place back on the cold baking sheet and refrigerate until set.
  8. Store in an airtight container in the fridge.
