Oven Roasted Pear Wrapped in Prosciutto di Parma

  • 1 ea Pear
  • 1 tsp olive oil
  • TT salt and pepper
  • 2 ea prosciutto di parma, thinly sliced
  • 1 cup heavy cream
  • 1/8 lb gorgonzola dolce cheese
  • 2 oz aged balsamic glaze
  • 1 ea scallion, sliced thin and held in cold water


  1. Cube the pear and toss in olive oil, salt and pepper.
  2. Roast in oven until soft.
  3. Thinly slice prosciutto and wrap a piece around the sides of the pear.
  4. Cook down heavy cream in a sauce pot and slowly add in Gorgonzola dolce cheese until thick.
  5. Dollop cream on top of the pear with the excess prosciutto holding it into place.
  6. Drizzle aged balsamic glaze over top.
  7. Garnish with sexy scallion.
