Perfect Pecan Pralines

Makes 20 mini parlines
  • 1/2 cup chopped pecans
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 3 Tablespoons milk
  • 1/2 teaspoon salt
  • 2 Tablespoons butter
  • 3/4 teaspoon vanilla
  • coarse salt for garnish
  1. Prepare a half sheet pan with a silicone mat or parchment paper. In a small skillet, toast the nuts until lightly browned and set aside.
  2. In a heavy sauce pan add sugars, milk and salt. Cook over low heat, stirring constantly, until the sugar is dissolved.
  3. Raise heat to medium and continue stirring until the mixture boils. Reduce heat and continue cooking until mixture is 235 deg F.
  4. Remove from heat, add butter and vanilla, but do not stir. Leave to cool for 5 minutes.
  5. Add nuts and mix with spatula until candy is thickened and no longer shiny, about 2 to 3 minutes. 
  6. Quickly dollop batter onto prepared sheet pan. Sprinkle with coarse salt. Allow to cool for 15 – 20 minutes.
