Perfect Poached Salmon with Avocado Green Goddess Dressing

Serves 4 to 6

For the poached salmon:

  • 1 teaspoon salt
  • 1/4 cup rice wine vinegar
  • 1 1/4 pounds salmon filet

For the green goddess dressing:

  • 1 avocado
  • 1 tablespoon Dijon mustard
  • 1 tablespoon rice wine vinegar
  • 2 green onions
  • 1/4 cup chopped tarragon leaves
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh parsley leaves
  • 3 anchovy fillets
  • juice of wedge of lemon
  • juice of wedge of lime
  • 2 garlic cloves; crushed
  • 1 cup plain non fat Greek Yogurt
  • 1 tablespoon chopped chives
  • salt & pepper
  1. Poach the salmon: Fill a wide rimmed saucepan with about 3" of water.  Add salt and vinegar and bring to a boil. Add fresh dill sprigs and salmon. Bring to just below a simmer and cook for about 6 minutes until done. Remove the salmon with a slotted spatula and transfer to a paper towel-lined plate to absorb the extra water.
  2. Make the dressing: Place first 11 ingredients in food processor (avocado through garlic) and blend until semi smooth.  
  3. Add yogurt and blend well.
  4. Stir in chives and season dressing to taste with salt and pepper.
  5. Cover and chill in fridge for an hour or more.
  6. Whisk thoroughly before serving.
  7. Serve salmon with dressing on top or on the side.
