Pimento Cheese Bruschetta


  • ½ lb Sharp Cheddar Cheese, grated, at room temperature
  • 2 Tablespoons Canned Diced Pimentos
  • 2 Tablespoons Mayonnaise
  • ½ Loaf French Bread, cut into ½ inch slices
  • ¼ Cup Extra Virgin Olive Oil
  • Fresh Cracked Pepper
  • 2 Teaspoons Chives, finely chopped
  1. Preheat oven to 400 degreesF.  Combine the first three ingredients into a mixing bowl.  Using a fork, mash ingredients until the cheese has softened and formed into a consistent mixture with the other ingredients, set aside. 
  2. Layout bread slices on a baking sheet and brush generously with olive oil and season with fresh cracked pepper.  Place baking sheet in the oven and bake 6-8 minutes, until edges are golden brown. 
  3. Remove from oven and spread a generous layer of the cheese mixture over the top of each piece of toasted bread.  Garnish with chives and serve.
