Potato Crusted Cod Over Ragout

Serves 4
  • 4 Sea Cuisine Potato Crusted Cod
  • 1 cup Diced Yukon Gold potatoes
  • 1 cup Diced corn
  • 2 tbsp. Green onions
  • 2 tsp. Olive oil
  • 1 cup Clam juice
  • 6 tsp. White wine
  • 1 cup Heavy cream
  • 2 tbsp. Chives
  • 10 Thyme leaves, for garnish
  1. Preheat oven to 375 degrees F. Place cod in the oven and bake for 32-35 minutes.
  2. If you don’t have access to an oven, or prefer to cook on the stove top, you can sauté the fish on a pan with a dash of olive oil for 3-5 minutes until it is golden brown.
  3. Heat two tbsp. of olive oil in skillet on low heat. Add in potatoes, corn, green onions and chives and let simmer for two minutes.
  4. Add in clam juice, white wine and heavy cream, let simmer for two minutes.
  5. Serve ragout on plate, top with Sea Cuisine and thyme for garnish.
