Pumpkin Bread Pudding


  • 4 cups cubed white bread with crust removed
  • (or use challah or potato bread stuffing)
  • 2 cups prepared pumpkin bread, cubed into 1/2 inch squares
  • 4 eggs
  • 1/4 cup butter, melted
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 3 cups whole milk
  1. Preheat oven to 350 degrees. Fill a 9x9 baking dish (greased) with both regular and pumpkin bread cubes. Toss a bit to combine. Set aside.
  2. In a mixing bowl, combine the eggs, sugar, milk, salt, vanilla and cinnamon and whisk thoroughly until well mixed. Gradually whisk in butter.
  3. Pour mixture over bread cubes. Press down with a spatula to allow the bread to soak up the custard mix. Allow to rest for 15 minutes before baking in a preheated 350 degree oven. Bake for 45 minutes.
