Rice Krispy Fruit Cups


Makes 6 individual treats


  • 10 Strawberries, green tops removed and quartered
  • 1/3 Cup Blueberries
  • 2 TBS Orange Juice
  • 1 TBS Corn or Vegetable Oil
  • 3 Marshmallows
  • 2 ½ TBS Honey
  • 2 ½ Cups of Rice Krispy Cereal
  • Wax Paper
  • Cooking Spray
  • Muffin Tin


  1. In a small pot over medium heat, combine fruit and orange juice. Simmer for 2 minutes and lightly mash up fruit. Remove from heat and cool until needed.
  2. In a medium pan, over medium-low heat, stir together oil, marshmallows and honey until marshmallows are melted and ingredients well combined. Add cereal and stir until evenly distributed.
  3. Cut 6 pieces of wax paper and lay over each muffin cup on a muffin tin.
  4. Spray each piece lightly with cooking spray in the middle.
  5. Divide Rice Krispies evenly amongst each cup and press down well to form treats.
  6. Push a little well down in the middle of each treat to hold the fruit.
  7. Spoon fruit mixture onto each treat and refrigerate until chilled.
  8. Gather the wax paper on top of each treat and twist or tie it together for easy transportation and storage.
  9. Treats can be eaten right away, or enjoyed for up to 3 days if refrigerated.
